2 eggs 
225g sugar
185ml cream
1 orange’s zest
100g butter
1 heaped tbsp plain flour
100g flaked almonds

  1. Beat 2 eggs, 125g of sugar, 125ml of cream and 1/2 an oranges’ zest for 2 minutes or until smooth
  2. The add 150g self raising flour and beat
  3. At 180 degrees or 160 degrees Celcius (fan-forced) bake the mixture for 20 minutes and then cool
  1. Heat 100g butter and remove from heat
  2. Then add 100g sugar, 60ml of cream, 1 heaped tbs  plain flour and 1/2 an oranges’ zest
  3. Return to heat and bring to boil. Stir 1-2 minutes until slightly thickened
  4. Stir in 100g flaked almonds
  5. Finally spread topping over cooled cake and cook for 15 minutes until golden. Cool in a tin and cut when ready to serve.
